  • 2 eggs (at room temperature)
  • 1/2 cup of olive oil
  • 2 tablespoons of sour cream
  • 1/2 cup of applesauce
  • 1/2 cup of pear puree
  • 1 2/3 cups of flour
  • 1/2 cup of sugar
  • 1 teaspoon of baking powder

  • 1/4 teaspoon of salt
  • 1 teaspoon of cinnamon
  • 1/2 teaspoon of ginger
  • 1/4 teaspoon of nutmeg
  • 3/4 cup of chopped pecans

  1. Preheat your oven to 350 degrees Fahrenheit.
  2. Prepare the streusel topping by mixing the butter, flour, sugar, cinnamon, and chopped pecans until crumbly, then set it aside.
  3. In a large bowl, use a hand mixer to beat the eggs and olive oil together until well combined. Add in the vanilla extract and sour cream.
  4. Stir in the applesauce and pear puree until evenly mixed.
  5. Gradually mix in the flour, sugar, baking powder, baking soda, salt, cinnamon, ginger, and nutmeg until just combined.
  6. Fold in the chopped pecans gently into the batter.
  7. Scoop the batter into muffin liners, filling them about two-thirds full.
  8. Sprinkle the prepared streusel topping over each muffin.
  9. Bake the muffins in the preheated oven for 15-20 minutes, or until they are golden brown and a toothpick inserted into the center comes out clean.
