  • 3 ripe bananas
  • 1/2 cup softened unsalted butter
  • 1/2 cup brown sugar
  • 1/2 cup white sugar
  • 2 beaten eggs
  • 1 tsp vanilla extract
  • 1/4 cup sour cream
  • 2 cups all-purpose flour
  • 1 tsp baking soda
  • 1 tsp baking powder
  • 1/4 tsp cinnamon
  • 1/2 tsp salt
  • Caramel and pecans for garnish


  1. Start by mashing the ripe bananas in a small bowl and set them aside.
  2. In another mixing bowl, cream the sugars with the butter using a handheld mixer.
  3. Add beaten eggs and vanilla, mixing them well with a spoon.
  4. Fold in the bananas and sour cream into the butter-sugar mixture.
  5. In a separate bowl, sift together the flour, baking soda, baking powder, cinnamon, and salt.
  6. Combine the dry ingredients with the wet ingredients, stirring until well mixed.
  7. Grease a bundt pan or cake pan and evenly spoon the mixture in, covering it with foil.
  8. Add water to the Instant Pot inner liner and place the pan on the trivet inside.
  9. Pressure cook in the Instant Pot for 50 mins (bundt pan) or 55 mins (cake pan) on High Pressure.
  10. Allow natural release for 15 mins, then release remaining pressure.
  11. Carefully remove the pan and let the banana bread cool for 10-15 mins.
  12. Once cooled, flip the bread onto a plate and garnish with caramel and pecans.
  13. Serve warm or store in the refrigerator for later indulgence.
