Cast Iron Skillet Chicken Pot Pie
If your kids are a fan of Disney, then you’ve probably seen Rapunzel a couple of times. Do you remember what she hit Flynn Rider with? That’s right! A cast iron skillet. And that’s our secret weapon in the kitchen for today.
Cooking with a cast iron skillet has tons of benefits:
• It can be used on a stove and in an oven
• It’s long lasting
• It’s easy to clean
• Your food gets fortified with a bit of iron when you use it
But be careful! It can get extremely hot. Keep that in mind for today’s entrée. We’ll be making a “one-pot” cast iron skillet chicken pot pie. This recipe is perfect if you’re looking for something easy to prepare. Simply put, all you have to do in this delicious recipe is prepare your ingredients and toss the skillet in the oven, and voila! You’re all set.
WHAT YOU NEED TO MAKE THIS CAST IRON SKILLET CHICKEN POT PIE
3 tbsp butter
3 tbsp flour
1 cup milk, or more depending on your preference
2 cups cooked chicken, cubed
1 can biscuits
1 cup carrots, chopped
1/2 cup celery, chopped
3 sprigs rosemary or thyme, fresh or dried
HOW TO COOK THE PERFECT CAST IRON SKILLET CHICKEN POT PIE
Preheat your oven to 400°F or 204°C. Don’t forget this step. This is very important if you want your chicken pot pie to cook evenly. Once you’ve turned on the oven, leave it to heat and prepare your other ingredients.
Add the butter and vegetables in a cast iron skillet over medium heat.
Add in flour and stir. Make sure to consistently stir to ensure the butter and flour don’t burn.
Whisk in the milk. Whisk in one direction at a medium pace until you have a thick mixture.
Add the chicken and mix.
Pull the biscuits apart and carefully place them on top.
Add the thyme or rosemary.
Bake in the oven for about 25 minutes or until biscuits are cooked through and golden brown.
CAN I USE PIE CRUST INSTEAD OF BISCUITS?
Yes! We make this dish with pie crusts often. You can make your own homemade pie crusts (super easy) or get store bought pie crusts for a quick fix.
CAN I USE CREAM INSTEAD OF MILK?
Absolutely! I am a huge fan of cream. It can be substituted for milk to make an already delicious filling even better! Especially if you prefer a thicker filling.
WHAT OTHER VEGETABLES CAN I ADD?
Adding some green peas and potatoes is also a good idea. It adds more texture but honestly, I use whatever I have on hand from my garden.
If you’re looking for a hearty hot meal to serve your family, then this is it! It’s delicious and easy to make. Try this comforting recipe!
