Marinade Ingredients:

  • 1/4 cup extra virgin olive oil
  • 1/4 cup fresh squeezed lime juice (2 limes)
  • 1 tablespoon lime zest
  • 1 teaspoon chipotle chili pepper
  • 1/2 teaspoon smoked paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 tablespoon honey (preferably local)
  • Salt and black pepper, to taste

Remaining Ingredients:

  • 11/4 pounds extra-large peeled deveined shrimp
  • 4 skewers


  1. Whisk all the marinade ingredients together.
  2. Pour half of the marinade into a bowl and reserve the other half for serving later.
  3. Add the shrimp to the bowl, coat them in the marinade, and let them marinate for at least 15 minutes.
  4. Skewer 5-6 shrimp onto each skewer.
  5. Preheat the grill to medium-high heat, then reduce it to medium.
  6. Lightly oil the grill grate and cook the shrimp for 3-4 minutes per side until they’re opaque.
  7. Once cooked, remove the shrimp from the grill and drizzle with the reserved marinade.
  8. Serve the Chipotle Lime Shrimp Kabobs immediately, garnished with fresh parsley, cilantro, or lime slices.
