Units Scale
  • 4 1/2 cups flour
  • 1 1/2 cups lukewarm water
  • 1 tablespoon light brown sugar
  • 2 teaspoons kosher salt
  • 2 1/4 teaspoons fast-acting dry yeast
  • 4 tablespoons melted unsalted butter
  • Coarse sea salt

Baking soda water bath:

  • 10 cups water
  • 2/3 cup baking soda

Egg wash:

  • 1 large egg yolk
  • 1 teaspoon water


  1. Begin by mixing warm water, sugar, and yeast in a bowl. Allow the yeast to foam for 5-10 minutes.
  2. Add flour, salt, and melted butter to the yeast mixture. Knead the dough until smooth.
  3. Let the dough rise until it doubles in size.
  4. Preheat the oven to 450°F and prepare a baking sheet with parchment paper.
  5. Divide the dough into 8 pieces and shape them into Mickey Mouse figures.
  6. Boil the pretzels in a baking soda water bath for texture.
  7. Brush the pretzels with an egg wash and sprinkle with sea salt.
  8. Bake for 12-14 minutes until golden brown
