Ingredients

  • 2 tbsp olive oil
  • 1 lb stew meat
  • 1 tbsp flour
  • 1/4 tsp salt
  • 1/4 tsp pepper
  • 1/2 diced onion
  • 4 ounces sliced baby Bella mushrooms
  • 3/4 tsp garlic powder
  • 3/4 tsp sugar
  • 1/2 tsp onion powder
  • 1/2 tsp dried thyme
  • 1/2 tbsp Worcestershire sauce
  • 1 bay leaf
  • 1 cup beef stock
  • 1 tbsp cornstarch
  • 1 tbsp water

Instructions

  1. In a bowl, combine flour, salt, and pepper. Coat the meat with the flour mixture.
  2. Heat the Instant Pot on Saute/Normal setting, add olive oil, and brown the meat. Set aside.
  3. Add diced onion to the pot and scrape off any stuck-on bits.
  4. Turn off Saute mode and add all ingredients (except cornstarch and water) to the pot.
  5. Close the lid, set the vent to sealing, and cook on Manual/High Pressure for 35 minutes.
  6. Allow for natural pressure release for 10-15 mins, then safely release the valve and remove the lid, along with the bay leaf.
  7. If the sauce needs thickening, switch the Instant Pot to Saute mode.
  8. Mix cornstarch and water in a cup, then pour into the pot while stirring for 1-2 mins.
  9. Serve your Mushroom & Beef Gravy over mashed potatoes, cauliflower, or noodles for a comforting meal.
