  • 3 tablespoons extra virgin olive oil, divided
  • 1 medium sweet onion, diced
  • 2 medium carrots, peeled and diced
  • 2 celery stalks, diced (leaves reserved)
  • 1 tablespoon fresh thyme, crushed
  • 1 pound boneless skinless chicken breasts, cut into 1-inch cubes
  • Salt and black pepper, to taste
  • 8 cups low-sodium chicken stock, divided
  • 1 cup Fideo noodles, cooked and drained
  • 1 tablespoon fresh lemon zest
  • 1 tablespoon fresh lemon juice
  • 1/4 teaspoon ground or freshly grated nutmeg
  • Freshly grated Parmesan cheese, to taste
  • Optional Garnish: Fresh parsley and thyme


  1. Heat 2 tablespoons of olive oil in a large stockpot or Dutch oven over medium heat. Saute the onion for 2 minutes until it begins to soften. Add carrots, celery (including leaves), and thyme, and saute for 4 minutes.
  2. Add chicken, salt, pepper, and 4 cups of chicken stock. Partially cover and simmer for 20 minutes until the chicken is cooked through and the vegetables are tender.
  3. While the soup simmers, cook the Fideo according to package directions in the remaining broth until al dente. Remember to reserve 2 cups of cooking liquid before draining the pasta. Transfer the pasta to a medium bowl, toss with the remaining olive oil, cover, and set aside.
  4. Just before serving, add the cooked Fideo to the Dutch oven. Stir and remove from heat.
  5. Mix in lemon zest, lemon juice, and nutmeg. Adjust the soup’s consistency by adding a bit of the reserved cooking liquid if it’s too thick.
  6. Divide the Fideo among serving bowls and top with the hot soup. Sprinkle freshly grated Parmesan cheese over the soup.
