We love to make homemade cookies for our kids this time of year. These Mickey Mouse Copy Cat Pie Crust Cookies are a fun twist on the classic pie crust cookie and they’re perfect for school lunches! They’re easy to whip up in just a few minutes.
Sometimes, you just want to make something that is simple and easy. No fuss, no muss – just some delicious Mickey Mouse Pie Crust Cookies your kids will love! These cookies are made with the pie crust dough from a package of refrigerated pie crusts. They are cut into shapes using cookie cutters, you can use any cookie cutter but we used Mickey Mouse to make them extra fun. Then they are baked until golden brown. It’s so easy to whip up this recipe in less than 25 minutes!
What are pie crust cookies?
Pie crust cookies are made by assembling two round pieces of pie dough, placing them together with filling between, and crimping the edges to seal. This type of pastry can be sweetened or savory.
What do pie crust cookies taste like?
The most common type is a sweet dessert. Pie crust cookies may be flavored with fruit preserves, such as raspberry or strawberry; nut butter, such as peanut butter; chocolate chips; and/or spices, such as cinnamon and ginger. There are even savory pie crust cookies that contain cheese and herbs. The contrasting tastes and textures of the pie dough and filling makes for a fun eating experience!
For my mickey mouse pie crust cookies, I used black berry preserves because that is what I had on hand.
I used store bought pie crust but you can certainly make your own. It does take a little bit of time but not too bad.

Ingredients
2 ½ cups all-purpose flour
1 cup unsalted butter – chilled, cut into tablespoon-size pieces
½ teaspoon salt
7 tablespoons ice water
1 tablespoon cider vinegar

Ingredients
- 2 pie crust store bought
- Preserves
- Mickey Mouse cookie cutter
Instructions
- Preheat oven to 375
- Roll out pie crust and cut out mickey cookie
- There will be a top and a bottom. Cut slits on the top.
- On the bottom, spoon on the preserves and add the top piece
- Around the edge, use a fork to press the two pieces together.
- Bake for 15-20 minutes. Keep your eye on them.
