Ingredients

Cookies and Butter Mixture

To begin, crush 5 oz of cookies and mix them with 1/4 cup of melted butter until the mixture is well combined. Press this mixture into the bottom of your pan, ensuring it covers the base evenly. While it’s optional, chilling this crust in the fridge for an hour helps it set firmly.

Lemon Cheesecake Mixture

In a mixing bowl, combine 2 cups of lemon yogurt, 7 oz of cream cheese, 1/2 cup of sugar, and 1 tsp of agar agar powder. Heat this mixture in a pot until it boils, stirring frequently. Once boiled, pour it over the cookie crust and refrigerate for at least 6 hours until firm.

Lemon Jelly Topping

Prepare the lemon jelly by dissolving 6 tbsp of lemon gelatin powder in a cup of boiling water. Stir until fully dissolved, then add a cup of cold water and mix again. Once the cheesecake has set, pour the jelly over it and refrigerate for an additional 3 hours until the jelly sets. Feel free to decorate with fresh fruit or icing sugar before serving.

ADDING THE LEMON JELLY:

  1. Dissolve the lemon gelatin powder in a cup of boiling water, ensuring complete dissolution.
  2. Add another cup of cold water to the mixture and stir thoroughly.
  3. Once the cheesecake has set in the fridge, pour the prepared lemon jelly over the top.
  4. Allow the cheesecake to chill in the fridge for an additional 3 hours until the jelly is set.
  5. For the final touch, decorate the cheesecake with lemon slices, strawberries, raspberries, or a sprinkle of icing sugar.
